How we check this reference
The Council of 12 covers growing, processing, green coffee, trade, roasting, chemistry, sensory assessment, water, extraction, machinery, café preparation and cultural history. These are AI-assisted review perspectives, not twelve independently qualified people.
Each content unit has primary and second-review ownership. Ownership alone is not factual acceptance. Claim checks distinguish original research, official guidance, named preparation methods, calculations and editorial advice. Checks record what was actually read, the applicable conditions and any unresolved limitations. Health and regulatory claims also require appropriate clinical or official sources.

Use recipes as starting points
Recipes draw on the named sources and explain variations. No local physical brewing trials have been performed for this edition. Equipment, beans, water, milk and serving traditions can change the result. Record your dose and yield, follow equipment instructions and adjust from an observed result.
Calculators explain their equations and assumptions. An illustrative result does not predict flavour, certify a roast or establish a safe commercial process. Business worksheets require your own current quotations and operating figures.
Accepted limitations
The Atlas is curated, not an inventory of every coffee drink. Four previously missing drink images are now labelled AI facsimiles. Source limitations remain explicit; these two preparations still lack calibrated protocols:

Finished US batch-brew, suspended drip-bag and an imagined Australian specialty-menu drink are illustrated by labelled facsimiles. No actual café serving or physical recipe trial is claimed.
The three exact specification exceptions are photographs resolving every fruit/seed layer in actual specimens; calibrated preparation information for every Atlas entry; and burner thermal matching and installation sizing. Follow each topic's qualifications and sources. Wider specialist research is not an automatic expanding task list. This edition is not an operating approval, a medical recommendation or proof that a method has been physically validated.
Photographs and credits
92 real photographs and 7 labelled AI-generated facsimiles are displayed. Public-domain and CC0 photographs are preferred; other photographs carry their Creative Commons credits and licence links. A photograph illustrates its named subject, not a measured ingredient ratio or guaranteed serving size.
Credits and reuse terms are available under each photograph and in Image credits. Source licence links for the real photographs were checked on 8 October 2026. Generated facsimiles do not carry fabricated public-domain or Creative Commons source-photo licences. Attribution and documented source edits are retained. These checks do not authorise deployment.
AI-generated facsimiles
David authorised these illustrations for missing photographs. Each is labelled at display, in its alternative text and in credits. They illustrate an expected appearance, with variable serving vessels, colours and styling. They are not documentary photographs, measured recipes or evidence of a named venue’s actual presentation.
The purple taro cold-brew example is imagined from Industry Beans Newstead’s published menu description; it is not the operator’s photograph, exact recipe or endorsement. Recipe-source qualifications remain separate from image appearance.

Reader checks and contributions
